"Dead layer painting only, useing H2O paints?"

Hello, I have been asked to paint several paintings just in black, white and grey. I have yet to buy oil paints again, because i am considering useing Watersoluble oil paints. But i have read so many differant opinions about them that i do not know how to decide. I have a 5 year old with allergies and i have them as well. I was advised to use acrylics but i feel they take to much work to blend properly. All i want to do is paint just the dead layer useing Antinov's dead layer study paints: black, white, ochre, perssia blue, and umber. but ive read that the only whites that are available are tit. white and zinc, in h2o's, and that these are not good to use. (?) I might later what to glaze a B & W painting but i am worried about cracking. Can anyone offer some opinions or advice on which direction i should go? Ive only seen Winsor Newton artisans, and Grumbacher max oils. Ive read good and bad things about both. I just want to paint without the worry of tonixicities. Thank you very much.

I thought that an example of my work might help. Im very detailed oriented, and this is a mural in graphite that i did sometime ago, i was told that i would do well painting "grisaille". This is not a picture of the completed work, but enough to show detail. Any opinions is welcomed .
