"Are varnishes necessary for oil paintings?"

I'm very new to oil painting (have just finished my first). I've been doing colored pencil portraits for a few years and thought I would try something new over the holidays. I have 6 commissioned colored pencil portraits lined up for the new year---but am having so much fun with the oil that I'm beginning to think about asking a couple of the clients if they would consider oil over colored pencil. They are repeat customers so I feel comfortable at least asking.

I'm currently working with Windsor and Newton water mixable oils. I'm self taught in all my artwork so I've been reading up on these. Varnishing....after 6 months of drying???? Wow. How do you deal with commissioned pieces?

Do ALL oils have to be varnished? Also how do you all keep dust etc--read DOG HAIR! :-)--off of your paintings until they are dry to the touch? Any good books out there on problems like these?
